This is a special project of mine and I'm really glad how they've turned out. These are Traditional mooncakes to celebrate the Mid-Autumn Festival which this year falls on 26th September. These cakes are filled with a smooth homemade lotus seed, encased in a soft cake like pastry and imprinted with a traditional Chinese pattern. Mooncakes from the shops are notoriously super sweet and contain lots of chemicals and additives so they can stay fresh for upto a year! I deliberately use less sugar and so the filling is more custard-like, and because they are homemade without preservatives they will last only 4-5 days (keep in the fridge). This year the fillings are lotus seed paste or lotus seed with salted egg yolk to resemble the yellow moon. This is my personal favourite as the yolk is a salty contrast to the sweeter filling; my children prefer the ones without.
